The Italian planetarium: News from the 2021 Guide Michelin 2021

The 66th annual edition of the famed Michelin Guide Italy was officially rolled out in Milan—streamed, of course. Here is a summary of the judgments for 2021.
An Olympian Three Stars were confirmed for 11 recipients, while the Two Star winners rose to 37, with 3 new entries, Davide Oldani’s D’O in Cornaredo (Milan), Matteo Metullio’s Harry’s Piccolo in Trieste, and Rocco De Santis’ Santa Elisabetta in Florence. 26 restaurants—a full 5 in Tuscany!–received their first Star, bringing that overall total to 323.
A small but gratifying note: The starred toques include 16 chefs under 35, with 4 of those under 30.
And 13 Green Stars were awarded to chefs who dedicate particular attention to sustainability, from Massimo Bottura to Norbert Niederkofler and Alfonso Iaccarino.
